Fresh Banana Muffins Every Day - My Favourite Christmas Thermomix Hack


The lead-up to Christmas is busy enough without trying to bake something from scratch every morning. This little hack has saved me so much time… and it means we can enjoy fresh banana muffins every single day in just ten minutes.

You only need one batch of banana bread batter, a few clever substitutions and your Thermomix (plus an air fryer if you’d like them super quick). It’s simple, flexible and perfect for school holidays or hosting family.

Why This Fresh Banana Muffin Hack Works

Most banana bread recipes make quite a lot of batter. Instead of cooking it all at once, I portion mine into individual muffin-sized serves.Then, whenever we want a treat, I simply spoon one portion into a silicone mould and pop it into the air fryer for ten minutes at 180°C.

Fresh muffins. Zero effort. Every day.

The Base Recipe (Cookidoo Banana Bread)

I start with the classic Cookidoo Banana Bread recipe because it’s reliable and comes together beautifully in the Thermomix. You can double the recipe if you want enough batter for the whole week (or longer).

Here’s what the original recipe calls for:

  • Unsalted butter

  • Ripe bananas

  • Caster sugar

  • Eggs

  • Plain flour

  • Baking powder

  • Salt

  • Bicarbonate of soda

  • Buttermilk•anilla extract

  • But here’s where the fun begins.

My Favourite Ingredient Swaps

These swaps make the muffins richer, more flavourful and a little healthier.

  • Coconut oil instead of butter — lighter and gives a lovely moisture

  • Coconut sugar instead of caster sugar — adds a caramel-like depth

  • Coconut milk instead of buttermilk — works perfectly with banana

  • 2 teaspoons dark cacao — deeper flavour without making it “chocolate cake”

  • Chopped pecans — optional, but so good for crunch


Banana bread is incredibly forgiving, so feel free to customise with your own add-ins.


Think dark chocolate chips, walnuts, cranberries or cinnamon for a festive twist.

Mixing the Batter in the Thermomix

Add your wet ingredients to the bowl first, followed by the dry.


Blend as per the standard recipe, making sure everything is smooth and well combined.


The Thermomix makes this part effortless, and the batter turns out perfect every time.

How to Portion and Store the Batter

Once your batter is ready:

  1. Spoon it into small airtight containers or freezer-safe silicone cups.

  2. Keep a few portions in the fridge if you plan to use them within 3–4 days.

  3. Freeze the rest for later — they thaw quickly.


I usually portion out enough for a week so the kids can grab a fresh muffin each morning or afternoon.

Cooking the Muffins (Air Fryer = 10 Minutes!)

To bake one fresh:

  1. Lightly spray a silicone cupcake mould with coconut oil.

  2. Spoon in one portion of batter.

  3. Air fry at 180°C for 10 minutes.


They rise beautifully and come out soft, warm and full of flavour.

You can cook them in the oven too, but the air fryer is unbeatable when you’re busy.
